Akki roti from cooked rice
Akki roti from cooked rice (leftover special)
This is a malnad dish. I learnt this from my sister in law. It is often served for breakfast or along with lunch/dinner. Served with ennegai (brinjal curry) or red garlic chutney it tastes awesome. For the recipe of traditional Akki rotti
Ingredients
Cooked rice - 1 cup
Rice flour - 3/4 can
Salt - for taste
Water - as necessary for grinding
Method
Taste the right cooker in a blender. Add very less water and grind it to a smooth paste. Transfer this to a mixing bowl. Add rice flour and mix. Add salt as needed. The dough should be of chapati dough consistency.
Take a small ball sized mix
Roll it into thin roti shapes. Dust it with rice flour if needed. The roti should be very thin.
Take a tawa and heat it. Put the roti on the tawa. Put a spoon of water and remove the excess rice flour on the roti. Heat on both sides. Press gently while cooking.
Serve hot with ennegai or red garlic chutney.
