Shankarpali/Tukdi - Savoury
Shankarpali/Tukdi - This is a crispy snack famous in Karnataka and Maharastra. It is a tea time snack and can be made either as sweet or savoury. It is very easy to make and here I have given the savoury recipe with wheat.
Ingredients (1 cup = 200mg)
Wheat flour - 2 cups
Maida flour - 1/2 cup
Rava - 1/2 cup
Jeera - 2 tbsp
Oma/ajwain seeds - 2 tbsp
Chilli powder - 2 tbsp
Salt for taste
Oil for frying
Method
In a large bowl take the wheat flour, maida flour and rava. Add jeera, ajwain chilly powder and salt for taste. Add 2 tsp of hot oil. Mix well. Add water little by little and knead the mixture into a dough. It should be of chapati dough consistency. Let it rest for 20 minutes. Cut it into diamond shaped pieces using a pizza cutter or serrated cutting wheel.
Heat the oil in kadai. Seperate the pieces and fry them in medium heat in batches. Fry till light brown. Put them in absorbant kitchen napkins and store them in air tight container.
