Pumpkin pie

 Pumpkin pie - i had lots of pumpkin so i thought of trying this new recipe. Not much difficult to make and requires simple ingredients only.

For the pie crust:

Maida - 1 and half cups 

Butter - one third cup 

salt for taste 

Water - 1/4th cup 

Method - take maida in a large bowl. Add the butter. Mix it well. Add salt for taste. Add water little by little to make a dough. Put it in a  oiled plastic cover and refrigerate it for minimum half hour.

In the meantime you can prepare the pumpkin filling 

Ingredients

Pumpkin puree - 2 cups (method will be described below)

Milkmaid or condensed milk - 400ml

Nutmeg pepper - half tsp 

Clove powder - half tsp 

Dry ginger powder - half tsp 

Cinnamon powder - half tsp 

Cardamom powder - half powder 

Salt a pinch

Method - Peel the pumpkin and cut it into pieces. You can either steam it or dry roast it to boil. Then make it into puree by blending it. You can add few spoons of water, though it is not necessary. In a mixing bowl add the pumpkin puree, condensed milk and the spice powders. Add a pinch of salt to balance the flavours

Rolling the pie - Remove the pie dough from refrigerator. Roll it according to the shape of your pie bowl. (Can use a cake tin). The crust should cover the side of your bowl too. You can dust it using all purpose flour. The crust should be about 3 to 5 mm in thickness 

Butter or oil your pie bowl. Transfer the rolled pie crust into the bowl. Cut the edges that are coming out of the bowl. Keep this in freezer for0 app 15 min.

Now you can keep your oven to preheat at 220 degrees.

After 15 min, you have to blind bake the crust. First prick all over the crust with a fork

That is keep a butter paper on the cold pie bowl and keep some pebbles (any grains with weight can be used.) This is prevent the bubbling up of the crust. Keep it in the oven at 220 degrees for 20 minutes. (Keep it for more if it 8s not cooked).

Once the crust is done, remove your butter paper and pebbles. Pour the pumpkin puree mixture. 

Bake it at 220 degrees for 40 min and lastly at 250 for another 10 minutes 

This can be eaten just like that or with a topping of whipping cream.
