Mushroom Rawa fry

 Mushroom rawa fry - This is a recipe inspired by the fish rawa fry. The fish recipe is very famous in the costal regions of karnataka. This dish is inspired by that and Venkatesh Bhats recipe. Simple and tasty dish.

Ingredients

Button mushroom - 250 gms (12 to 15)

Corn flour - 1 tbsp

Rice flour - 1 tbsp

Besan - 1 tbsp

Ginger garlic paste - 1 tsp

Salt to taste

Rava - 5 to 6 tbsp

For red chilli paste

Red chilli - byadgi variety -7 to 10 

Can use kashmiri red chilli if byadgi is not available

Vinegar -2 to 3 tsp

Oil to fry

Method

First let us make the red chilli paste.

Take a thick bottomed vessel with broad base. Take some water in it and heat it. Add the byadgi chillis to it. Let them heat 5 to 7 min. The raw smell of it will go. Once the smell is gone, drain the water and grind the chillis with 2 tsp of vinegar in a mixie. Your red chilli paste is ready. This can be stored for about 2 weeks.

Though this process seems tedious and you may want to replace the paste with red chilli powder, the taste with the paste is definitely worth your effort and time.

Clean the mushrooms in running water. Wipe them with a clean cloth. Trim the stem of it if too long. Cut into 2 if the mushroom is big. Add 1 tbsp of corn flour, besan and rice flour each. Add a tsp of ginger garlic paste. Add 1 tbsp or more of the red chilli paste prepared. Add salt per taste and Mix well. Add very less or no water at all. The flour and the paste should stick to mushrooms thats all. It should not be a batter. Let this marinate for about 20 min.

Heat oil in a frying pan. Take rava in a plate. After about 20 min of marination, take the mushroom and coat it with rava on all the sides. Deep fry these coated mushrooms in medium flame till golden brown. 

Serve hot.
