Watermelon rind halwa

Watermelon rind halwa - Summers are the season of watermelons. We always eat only the pink part and throw away the rest. I happened to see a recipe which said that halwa can be prepared using the rind. So I thought why not. It came out well, tasting almost similar to ashgourd halwa. Taste from waste.
Ingredients (1 cup = 250 mg)
Watermelon rind - grated 2 cups
Sugar - 1/2 cup
Cardamom powder - 1/2 tsp
Ghee - 4 tbsp
Saffron strands - few soaked in a tsp of warm milk (optional)
Roasted cashew nuts, badam and raisins
Method
Remove the pink flesh of watermelon. Remove the outer green skin of the watermelon using sharp knife or vegetable peeler.
Grate the rind using the grater.
Take a thick bottomed pan. Add 2 tsp of ghee. Take the grated rind along with its water in the pan. Heat it in high flame. Let it cook, stir occasionally. heat it till most of the water evaporates and the rind gets almost cooked. It will take upto 15 minutes.
Now add the sugar and cook it in medium or low flame. The sugar will dissolve and thicken the mix. Stir occasionally. Add few drops of lemon juice so that the sugar doesn't crystalise. Add saffron strands soaked in milk, when the mix us thickened. Also add ghee and stir it for another 5 minutes. Roast the cashew and badam and raisins. Add it to the halwa and remove from flame.
Tasty watermelon rind halwa is ready. Can be served hot or cold.
