Makai ka vada

Makai ka vada - A simple tea time snack made from maize flour. It is a Gujrati recipe, which is very yummy. When you get bored of the usual snacks like bajji, vada and Bonda, you can try this.
Ingredients
Maize flour - 1 cup
Ginger garlic chilli paste - 2 tbsp
White til - 2 tbsp
Sugar - 1/2 tsp
Lemon juice - 1 tbsp
Turmeric powder - 1/2 tsp
Baking soda - a pinch
Red chilli powder - 1 tsp
Salt for taste
Curds - 1 cup
Oil for frying
Method
In a wide mouthed bowl, take the makkai ka atta. Add the ginger garlic chilli paste, sugar, white tilred chilli powder, turmeric powder and salt for taste. Also add the lemon juice and baking soda.
Add the curds and some water. Knead the mix into a soft dough. Cover with a wet cloth and allow it to rest for 2 hours.
In a pan heat the oil. Divide the dough into small balls. With the palm of your hand flatten the ball and make it into a shape of disc. It should be of medium thickness.
Slide the vada into the hot oil one by one carefully. Deep fry in medium flame till golden brown.
Serve hot with green chutney or sauce.
