Ellu unde

Ellu unde - Til laddu or sesame seed laddu.
I am here with a easy and healthy recipe which can be prepared for festivals.
This can be prepared with black til or white til. The tastes will change accordingly. The black ellu will have a nuttier taste so some people like to mix black and white ellu. But I love the flavor of black and made the laddu with black ellu only. This recipe requires only ellu, jaggery and cardamom powder.
Ingredients
Ellu/til/sesame seed - 1 cup
Powdered jaggery - 3/4 cup
Cardamom powder - 2 tsp
Method
First dry roast the ellu in a thick bottomed kadai. Let it crackle and give a nice aroma. Take care not to overroast it. Keep it aside.
In the same kadai, take the powdered jaggery. Add very little water (3 tbsp or so) and bring it to boil.
The jaggery syrup should be of soft ball consistency. (See notes)
Add the cardamom powder and mix well. Add the roasted ellu and mix again. Remove from heat. Allow it to cool a little.
Moisten your hands,take a spoonful of the warm mix and make small balls.
Allow it to cool completely. Store it in air tight containers.
Notes - To check the consistency of syrup, keep a small bowl of water. Add a drop of jaggery syrup. You should be able to make a ball of this jaggery.
Be careful while you do this.
