Mango pudding

Mango pudding - This is a simple recipe using mango. This is a famous recipe in Thailand, Singapore, Hong Kong etc.
I have used agar agar instead of gelatin and this recipe uses coconut milk, so this is a vegan recipe.
Ingredients
Mango - 3 to 4 yielding upto 2 cups pulp
Coconut milk - 1 cup
Sugar - 4 tbsp or add as needed
Honey - 1 tsp
Saffron - 2 strands.
Agar agar -4 tbsp chopped finely
Cut mango - for decoration
Method
Wash the mango, remove the skin and deseed it. Add the sugar and honey put into blender and grind into a smooth paste.
I have prepared fresh coconut milk. To do so, put grated coconut in a blender. Add little water and grind it finely. Strain it using a fine muslin cloth or fine sieve.
In a small vessel take half cup of water and add the agar agar strands. Boil it till the agar agar strands dissolve completely.
Add this to the mango puree once it is cool. Add the coconut milk also. Blend it again and refrigerate it. Decorate it with cut mangoes and serve cold.
