Veg kurma

Veg kurma - Korma or kurma is a dish prepared using vegetables with ground massage and coconut added. It is made for chapati or for non spicy mixed rice items like thenga paal saadam (coconut milk rice), ghee rice, matar pulao etc. Here i have given the mix veg karma i make for rice.
Ingredients - Vegetables
Potato - 1 medium cubed
Beans - 8 to 10 chopped
Carrot - 1 medium chopped
Cauliflower - 1 cup florets
Green peas - 1/2 cup fresh or soaked
Tomatoes - 2 finely chopped
Onion - 2 medium vertically sliced
To grind and make paste
Ginger - 1/2 inch
Garlic - 10 cloves
Chilli - 1
Coconut - 3 tbsp
Fried gram (pottukadalai) - 1 tbsp
To roast and powder
Poppy seeds - 1 tsp
Star anise - 1
Bay leaf - 1
Green Cardamom - 1
Cinnamon - 1/2 inch
Other
Red chilli powder - 1 tsp
Turmeric powder - a pinch
Salt for taste
Method
First roast the bay leaf, green cardamom, cinnamon, poppy seeds and star anise and powder it. Keep the spice mix aside.
Grind the coconut, garlic, ginger, green chilli and pottukadalai adding very little water in a blender.
Take a kada with oil and add cumin seeds. When they splutter, add the onions. Saute it till translucent, add the tomatoes. Sure till mushy and soft. Add the spice mix,turmeric powder, red chilli powder and the chopped veggies. Add some water. Allow it to boil. (Alternatively you can cook the veggies in a pressure cooker or rice cooker or microwave and add). Once the vegetables are cooked add the ground coconut mix. Add salt for taste. Once this comes to a boil, remove it from heat and add chopped coriander leaves.
Serve hot with any mildly flavored rice.
