Matar pulao

Matar pulao - This is a quick pulao recipe as it does not involve vegetable cutting. Matar pulao is quick and one pot and very delicious. It can be served with a curry made with paneer, veg kurma, aloo curries and raita. It is not always necessary to use basmati rice for making pulao. I use sona masoori or ponni.
Ingredients (1 cup =250 ml)
Rice - 1 and half cup washed
Fresh or frozen Peas - 1 cup
Water - about 2 and half cup
Onion - 2 medium vertically sliced
Ghee - 2 tbsp
Cashew - 10 to 15 halved
Salt for taste
Spices for matar pulao
Bay leaf - 1
Green cardamom -3
Black cardamom - 1
Mace (javitri) -1 or 2 strands
Pepper - 4 to 5
Method
In a pressure cooker, take ghee and heat it. Add a tsp of jeera. Add the bay leaf, green and black cardamom and mace. Saute it for a minute. Add the vertically cut onions. Saute till they become translucent.
Add the peas and the rice. Saute it for 2 to 3 minutes. Add the water and salt for taste. Stir well.
Cover the lid and cook till 1 whistle.
Saute the halved cashew till golden brown. Add to the rice. Serve hot with gravy and raita.
If cooking in a vessel, cook till the water is completely absorbed
