Veg fried rice

Veg fried rice - A delucious, flavorful and quick recipe for lunch or dinner. It is made with finely chopped vegetables, sauces and precooked rice. I have added tips on cooking the rice so that the rice grains are well seperated. The recipe can be modified to suit your taste.
Ingerdients (1 cup = 250 ml)
Rice (uncooked) - 1 cup
Capsicum - 2 medium sized finely chopped
Onion - 2 medium sized finely chopped
French beans - 10 to 15 finely chopped
Carrot - 2 medium sized finely chopped
Cabbage - 1/4 th of a medium sized - finely chopped
Fresh peas - 5 tbsp (optional)
Ginger - 1 inch finely chopped
Garlic - 10 to 15 cloves finely chopped
Green chilli - 1 or 2 finely chopped (optional)
Salt for taste
Pepper powder - 2 tsp
Soya sauce - 1 tsp
Vinegar - 1 tsp
Chilli sauce - 2 tsp
Oil - 3 tbsp
Method
For cooking rice - Take 1 cup rice, wash it. Add 1 and 3/4 cup of water and a tsp.of oil. Also add a pinch of salt and 1/2 tsp of lemon juice. Cook it as usual in rice cooker or pressure cooker. Once it is cooked, spread it on to a plate
Making veg fried rice
Take a large kadai or wok and heat it. When it is heated put oil from all sides. Add the finely chopped ginger and garlic. Saute it for few seconds. Add the finely chopped onions. Saute it for few seconds. Add chopped beans, green chilli, fresh peas and carrot. Saute them in high flame. Also add cabbage and capsicum. Saute in high flame for 2 minutes. The vegetables should not cook fully and should have a bite to them.
Make a space in center of wok. Add salt and pepper in the center. Also add green chilli sauce, soya sauce and vinegar. Toss it well. Adding this in the middle, gives it a burnt flavor, which is seen in chinese flavor.
Add the cooked rice and toss well. Remove from heat. Serve hot with tomato sauce or chilli sauce.


1. The entire cooking has to be done in high flame.
2. Adding the salt, pepper and sauces in the center and allowing them for a while imparts a burnt flavor to the fried rice.
3. The vegetables can be altered as per your taste.
4. If you dont have fresh peas, you can add sweet corn or skip it.
