Pudina rice (mint rice)

Pudina rice / mint leaves rice
A mildly flavored rice, which is spicy and tasty made using mint leaves. As you know mint leaves have a nice aroma, and the rice made using this will have a awesome aroma and flavor.
Here i have added capsicum also to the rice. You can add other vegetables like potato, carrot, peas and corn.
Ingredients
Pudina (mint leaves) -1 cup loosely packed
Green chilli - 3 to 4
Rice - 1 and half cup (uncooked)
Capsicum - 1 (chopped)
Ginger - 1/2 inch 
Garlic - 8 to 10 cloves
Onion - 2
Lemon juice - of half lime
Bay leaf - 1
Cinnamon - 1 inch
Clove - 2
Ghee - 2 to 3 tbsp
Salt for taste
Optional - tomato -1
Potato/carrot - 1/2 cup
Peas/sweet corn - 1/4 cup
Coriander leaves - 1/4 cup
Method
Take the mint leaves, coriander leaves, half of onion, ginger and garlic and blend it into a smooth paste. Keep it aside.
I dont like to get the spices as bite while eating, so i put the spices, i.e., cinnamon, cardamom, bay leaf and gloves into a blender and powder it.
In a pressure cooker, take 2 tbsp of ghee. Add cumin seeds, once they start spluttering, add the paste. Add the tonatoes (optional). Heat it till it realeses all water and the raw smell goes. Add the chopped vegetables if you are adding. Now put the uncooked rice. Saute it for a minute.
Add water for 1 cup of rice, a little less than 2 cups of water will be needed. Add salt for taste. Cook till 1 whistle. Remove from heat.
Take a kadai with about 3 tbsp of ghee. Shallow fry the onions until golden brown. Add the chopped capsicum  and keep it in heat for about 2 minutes. Add the boiled rice and mix it well.

Serve hot with onion cucumber raita
1. I like the crunchiness of capsicum and don't like if it is fully boiled and mashed. That's why I added it with seasoning. You can add it along with rice to pressure cook it, if you want.
