Goli baje

Goli baje (Mangalore bajji)
This is a famous snack in Mangalore region and therefore it is called Mangalore bajji. It is a simple recipe easily prepared.
Ingredients
All purpose flour (maida) - 2 cups
Sour curds - 1 cup
Green chillies - 3 finely chopped
Ginger - about 2 tbsp finely chopped
Curry leaves - finely chopped
Grated coconut - 2 tbsp  (kobbari will be better)
Baking soda - 1/2 tsp
Salt - for taste
Method
In a large bowl take maida, finely chopped green chillies, ginger and grated coconut. Add a pinch of asofoetida. Add baking soda and curds and mix it well. You can add water along with curds. (Add 1 tbsp of lemon juice if the curds are not sour). The consistency of the mix should be thick. Rest it for about half an hour. (At least 15 minutes).
Take a frying pan, add oil and heat it. Put small lemon sized balls of the mix to oil and deep fry them. (Goli baje need not be round). Remove it when they turn golden brown. Serve hot with coconut chutney or tomato ketchup.
