Paneer fried rice

Paneer fried rice - A nutritious rice recipe for quick dinner or lunch box. My son loves paneer and he wanted to eat paneer fried rice. It can be prepared with leftover rice as well. The rice should be dry. Do not use hot rice or else it will become like a mass. Cool the rice and then mix. I have also described how to cook the rice so that the rice grains are well seperated. I have not added any sauces in making this rice.
Ingerdients (1 cup = 250 ml)
Rice (uncooked) - 1 cup
Paneer - 200 gms cut into cubes
Capsicum - 2 medium sized cut vertically
Onion - 2 medium sized cut vertically
French beans - 10 chopped thinly
Carrot - 2 medium sized chopped thinly
Ginger - 1 inch crushed
Garlic - 5 cloves crushed
Salt for taste
Pepper powder - 1 tbsp
Red chilli powder - a pinch
Coriander powder - 1/2 tsp
Oil - 3 tbsp
Method
For cooking rice - Take 1 cup rice, wash it. Add 1 and 3/4 cup of water and a tsp.of oil. Also add a pinch of salt. Cook it as usual inrice cooker or pressure cooker.
Making paneer fried rice
In a large kadai or wok, take some oil. Add the cubed paneer. Roast them till thwy are golden brown. Keep it aside. Take some more oil and Add the crushed ginger and garlic (or ginger garlic paste). Saute it till the raw smell goes. Add the vertically chopped onions. Saute it till translucent. Add chopped beans and carrot. In a slightly low heat, saute them. You can sprinkle few drops of water. They should not be cooked fully. Add capsicum and saute till it becomes bright green. Add the cooked rice and roasted paneer. In high flame, toss the mix well. Add salt for taste, pepper powder, coriander powder and a pinch of red chilli powder. Toss it well and remove from heat. Serve hot with tomato sauce or chilli sauce.

1. I like to get the bite of vegetables. So I dont chop them finely.
2. You can also preboil the vegetables in rice cooker. But the crunchiness of it will go. It will take shorter time.
3. The choice of vegetables is yours. You can add cabbage, potatoes and cauliflower also.
4. If you want to add tomatoes, add once the onions are translucent. Saute them till they become soft and mushy.
