Bhel puri

Bhel Puri - This is a very famous street food in India. It is made with puffed rice to which a combination of chutney and spices are added. It doesn't require any cooking, so it can be done for 'fireless cooking'. The spices and flavors added differs in various regions. I have given a recipe, the taste of which everyone likes at home. You can increase or decrease the spices as per your taste.
Ingredients
Puffed rice - 2 cups
Finely chopped Mint leaves - 5 tbsp
Finely chopped Coriander leaves - 7 tbsp
Tamarind - 1 tbsp
Powdered jaggery - 2 tbsp
Green chilli - 3 finely chopped
Onion - 1 medium sized finely chopped
Tomato - 1 medium sized finely chopped
Grated carrot - 1/4 cup
Roasted peanut - 3 tbsp
Sev - 1/2 cup.
Salt or rock salt for taste
Chat masala - 1/2 tsp
Red chilli powder - 1/2 tsp
Method - The puffed rice has to be crispy. If not roast it slightly using a kadai. In a small cup take the deseeded tamarind, add 5 tsp of water. Add powdered jaggery. This should be like a paste, not too watery. In a blender take mint leaves and 5 tbsp of coriander leaves, add a pinch of salt and make it into a smooth paste. You can add cumin seeds to this if you want.
In a wide mouthed vessel take the puffed rice. Add sev, onions, tomatoes, mint coriander chutney, tamarind chutney, green chilli, roasted peanut, grated carrot, chat masala and salt for taste. Mix well. Add the coriander leaves. Serve immediately.

1. Bhel Puri has to be eaten immediately after it is made. Otherwise it becomes soggy.
2. I have made the mint coriander chutney and tamarind jaggery paste. You can use readymade ones. Tamarind dates chutney is available in many stores.
3. Many people like to add boiled, peeled and chopped potatoes. It will give a different kind of taste.
4. If it is season of raw mango, you can add grated raw mango for an awesome taste.
