Palak rice / Palak pulao - one pot method
Palak rice is a delicious and nutritious recipe. I had previously made and written the recipe of making palak rice with cooked rice. For the method Palak rice
Here I tried to make 1 pot meal, cooking the palak and rice together. As the rice absorbs the flavor of palak I like this better. I have added carrots and sweet corn. You can skip this or even add other vegetables. The flavor will change according to choice of vegetables.e
Seasoning is suggested
Ingredients
Making spinach puree
Palak - 2 small bunch
Green chilli - 4
For making spice powders
Cardamom - 2
Bay leaf - 1
Cinnanamon - 1/2 inch
Clove - 3
Star anise - 1
Dry roast these and make into powder. I don't like getting them while eating, that's why I prefer to make spice powder.
Other ingredients
Rice - 2 cups (uncooked)
Carrot - 2 (finely chopped)
Capsicum - 1 (mediumly chopped)
Sweet corn - 1 cob
Ginger garlic paste - 2 tsp
Tomatoes - 1 medium finely chopped.
For seasoning -
Ghee - 4 tbsp
Onions - 2 vertically slit
Method
First let us make palak puree.
Blanch the palak by putting them in hot water and boiling them for a while. Remove it from heat, drain the water and immediate put cold water. Drain this and make it into a puree using blender.
In a pressure cooker, take 2 tsp of ghee. Add the ginger garlic paste and saute it. Once it is brownish, add the tomatoes. Heat it till it realeses all water. Add the palak puree and heat it for about 5 minutes. Add the chopped carrot (and any other vegetables if adding). Also add the rice. Add water if necessary (for 1 cup of rice, a little less than 2 cups of water+ puree (put together) will be needed. Add salt for taste. Cook till 1 whistle. Remove from heat.
Take a kadai with about 3 tbsp of ghee. Shallow fry the onions until golden brown. Add the chopped capsicum and sweet corn and keep it in heat for about 2 minutes. Remove it from flame and add it to the pressure cooker and close it. Let it remain closed for 10 min. After that open the cooker and mix it well.

Serve hot with onion cucumber raita
1. I like the crunchiness of capsicum and don't like if it is fully boiled and mashed. That's why I added it with seasoning. You can add it along with rice to pressure cook it, if you want.
2. Same with sweet corn
3. Adding peas with this gives a very nice taste
