Pav bhaji

Pav bhaji - This is the most popular street food of Mumbai. The usual vegetables added to the bhaji are potatoes, cauliflower, french beans, peas and carrots. I have used a readymade pav bhaji powder. It is available in every store nowadays.

Ingredients
Pav - 10 -15
Butter - 3 tbsp
Ginger garlic paste - 1 tsp
Tomato - 1 finely chopped
Capsicum - 1 cut into cubes
Onion - 1 finely chopped
Green chillies - 2 finely chopped
Red chilli powder - 1 tsp
Turmeric powder - 1 tsp
Pav bhaji masala powder - 3 tsp
Salt for taste
For cooking in pressure cooker (the quantity of vegetables is your choice. You can add as per your taste. Also you can skip a vegetables if you don't have)
Potatoes - 3 medium sized
Carrots - 2 medium sized
French beans - 15
Peas - 1/3 cup
Cauliflower - 1/3 of medium sized
For serving
Onion - 1 finely chopped

Method
The baji
First boil the vegetables of your choice (potatoes, cauliflower, peas, French beans, carrots) in a pressure cooker. Mash it well.
Take a wide mouthed kadai, add a tsp of butter and heat it. Add finely chopped onions, and saute them until golden brown. Add ginger garlic paste and saute till the smell goes. Add tomatoes and heat it till it releases its juices. Add chopped capsicum and heat it. Add red chilli powder, salt, turmeric powder. Add the boiled and mashed vegetables. Add pav bhaji masala (about 3tsp) and boil it for 2 to 3 minutes. Add some water and allow it to boil. (You can use the water used for boiling the veggies). Garnish with chopped coriander leaves.
The Pav
Take a dosa kada. Cut the pav horizontally. Put butter on it and heat it in the tawa
Serving suggestion
Serve the pav with hot bhaji and finely chopped onions along with a generous dose of butter
