Rawa vada -This is an instant vada and doesn't need much preparation. Awesome with tea.
Ingredients
Rawa (semolina) - 1 cup (you can use either roasted or unroasted)
Rice flour - 1/2 cup
Onion - 1 medium sized finely chopped
Green chilli - 2 finely chopped
Ginger - 1 inch finely chopped
Coriander leaves - 2 tbsp finely chopped
Curry leaves - 2 tbsp of finely chopped
Curds - 1 cup
Baking soda - a pinch
Salt for taste
Oil - for frying
Method
In a large mouthed vessel, take rawa and rice flour. Add the finely chopped onions, green chillies, coriander leaves and curry leaves. Add a pinch of baking soda and salt for taste. Heat 2 tbsp of oil and add it to the mix. (Or add 1 tbsp of butter). Add curds little by little and mix well. The consistency of the mix should be soft but not watery. Cover it and allow it to rest for 15 minutes.
Take a small portion of this in the palm of your hand. Flatten it using the fingers and make it into a flat vada.
Keep oil for heating in a kadai. When it heats, transfer the vada to oil carefully. Take care not to break the vada. Deep fry the vada on both sides in medium flame until golden brown. Serve hot with coconut chutney or sauce during tea.
