Water -as necessary
For the stuffing
Gobi - 1/2 of medium sized
Green chilli - finely chopped
Coriander powder - 2 tbsp
Garam masala powder - 1 tsp
Red chilli powder - 1 tbsp
Salt for taste
Method
Making dough
In a bowl take the wheat flour and salt for taste. Add ghee.Add water as necessary and knead the flour into a dough. (Use 1/2 cup hot water to make soft dough). Cover it and allow it to rest.
Making the stuffing
Take the Gobi florets. Boil water in a vessel and put the gobi florets into the hot water. Let it remain in it for a minute. (This helps to kill the worms and eggs which may be in the Gobi). Now take a grater and grate the Gobi finely. In a vessel take the grated Gobi. Add the finely chopped chilli, coriander powder, chilli powder and garam masala powder. Add salt for taste and mix well. Your stuffing is ready.
Now make small balls from the wheat dough and roll it into small circle. Take a spoon of the filling and fold the circle. Cover it properly and make it into a ball again. Sprinkle flour as needed and roll it like a chapati.
In a girdle (tawa), put the gobi paratha. Heat it. Add ghee on both sides and heat both sides. Both sides should be roasted well.
Serve hot with pickle and curds or any simple dal.
