Chattambode (Masala vada/ paruppu vada)
Masala vada or chana dal vada is called as chattambode in udupi region. This is a popular tea time snack. You may also like other fried snacks like Vazaipoo vadaiFalafelSweet corn pakodaSabudana vada
Chana dal/ kadale bele - 1 cup
Red chilli - 5 to 6 (adjust accordingly to your spice level)
Saunf/ fennel seeds - 1 tsp
Ginger - 1 inch grated
Onion - 1 finely chopped
Curry leaves and coriander leaves - finely chopped
Asofoetida - a pinch
Salt - for taste
Oil - for frying
Method
Soak the chana dal for about 3 hours. It should become soft. Then drain the water. Put the chana dal, red chilli and saunf into a mixie and grind it coarsely. You can keep some chana dal seperate and add to the grinded mix. Add the finely chopped onion, coriander leaves, curry leaves and mix it well. Add the grated ginger, asofoetida and salt. Mix it well.
Take small portion of the mix. Roll it into balls and flatten it using the palm of your hand.
Take a kadai with oil. Heat the oil. Deep fry the chattambode. It should turn golden brown.
Serve hot with coconut chutney or sauce
