Tomato pickle

Tomato pickle - this dish can be called as tomato thokku also. Made of ripe tomatoes, this can be stored. Served as a side with chapati, roti or curd rice.
Ingredients
Tomatoes - 20 chopped
Fenugreek seeds - 3 and 1/2 spoon
Mustard seeds - 3 and 1/2 spoon
Red chilli powder - 6 to 7 tbsp
Tamarind - about 2 cups extract
Oil - about 10 tbsp
Garlic - 15 to 20 cloves
Salt - for taste
For seasoning
Oil - 2 tbsp
Mustard seeds - 3 tsp
Method
Grind the fenugreek and mustard seeds into a powder.
In a large kadai take oil. When it is heated add the garlic cloves. Fry it well. Add the tomatoes. The tomatoes have to be well coated by oil. Cook the tomatoes till they become soft and mushy. Add the tamarind extract and cook. You should cook this in slow heat till the tomatoes leave oil. Add the fenugreek - mustard powder, chilly powder and salt. Cook till the spices are well cooked.
In another kadai take oil, add mustard seeds and allow it to splutter. Add this seasoning to the tomato pickle.
Store it in a dry container in a dry place.
1. The seasoning step is optional.
2. There should be a layer of oil on the pickle. It prevents the pickle from spoiling soon.
3. I used sesame seed oil. It gives a very good flavor to the pickle
