Kosambari
Kosambari is a south indInd type of salad. It is usually made using lentils like hesarubele (green gram dal), kadale bele(chana dal) sprouted green gram (hesarukalu) etc to which raw vegetables like carrot and/or cucumber is added. It is
very healthy. In some parts of karnKarna it is a custom to distribute kosambari on Ram navami day.
Here I have made a mixed type of kosambari using both hesarubele and hesarukalu.
Ingredients
Green gram (hesarukalu) - 1/2 cup sprouted
Green gram dal (hesarubele) - 1/2 cup
Cucumber - 1 finely chopped
Coconut - 3 tbsp grated
Green chilli - 3 finely chopped
Sweet corn - about 5 tbsp (boiled or raw) optional
Coriander leaves - 2 tsp finely chopped
Lemon - 2 tsp of juice
Salt for taste
Method
Soak the hesarubele in water for 1 to 2 hours. Drain the water. If you want to use boiled sweet corn, boil it. Add the sprouted green gram and boiled or raw sweet corn. Add the chopped cucumber and green chillies. Add the grated coconut and lemon juice. Add salt as necessary. Mix well and serve.
1. You can add seasoning of mustard and red chilli to this.
2. Grated carrot and pomegranate can be added.
3. You can make it with only hesarubele or hesarukalu.
