Cheesy stuffed capsicum

Stuffed capsicum is an easy to make dish which is excellent with roti or chapati.
For the stuffing, the main ingredient used is potatoes. You can use peas or corn in the stuffing. Since I love cheese, I added that also.
Usually stuffed capsicum is either baked or pan roasted. I tried steaming and the results were yummy.
Ingredients
Capsicum (Shimla mirch or bell peppers) - 4 to 5
Potatoes - 5 medium sized
Sweet corn - 1 cup
Green chillies - 2 finely chopped
Onions - 2 medium sized finely chopped
Ginger garlic paste - 2 tsp
Red chilli powder - 2 tsp
Pepper powder - 1/2 tsp
Coriander powder - 2 tsp
Garam masala powder - 1/2 tsp
Oil - 3 tbsp
Salt - for taste
Method
Making the stuffing
Boil and peel the potatoes. Mash them. Take a kadai with some oil. Add jeera (cumin seeds) and allow them to splutter. Add Ginger garlic paste and finely chopped onions and saute them till golden retriever. Add the sweet corn. Now add the mashed potato and roast it. Add chilli powder, coriander powder, pepper powder and garam masala powder. Add salt for taste and mix well. Remove from heat and add 2 tbsp of lemon juice. Your stuffing is ready.
Slice of the top of capsicum. Remove the seeds. Grease it with oil and salt. Keep it in a steamer for about 10 min. Remove from steamer and fill the inside of capsicum with the stuffing. Add grated cheese.
Take a pan with some oil. Keep the stuffed capsicum inside it. Close the lid and allow it to cook for about 5 minutes. Change the sides and roast it if necessary.
Serve hot with roti or chapati.
