Baigun bhaja
Baigun bhaja - Baigun means brinjal and bhaja means fry. Baigun bhaja is a bengali dish where brinjal is coated with besan and spice mix and shallow fried. It goes well with rice and dal or even chapati.
Ingredients
Brinjal - 1 large size (bottle shaped)
Besan - 3 tbsp
Coriander powder - 1 tbsp
Red chilli powder - 1 tbsp
Cumin powder - 1/2 tbsp
Turmeric powder - a pinch
Garam masala powder - a pinch
Aamchoor powder/ lemon juice - 1/2 tsp
Salt for taste
Method
Take a wide mouthed bowl. Add the besan to it. Add the red chilli powder, coriander powder, cumin powder, turmeric powder and garam masala powder. Add salt for taste. Add aamchoor powder or lemon juice. Mix well. Your spice mix is ready
Now cut the brinjal horizontally. About 1/2 inch thickness each. Coat each slice in the spice mix. Allow it to rest for 5 min.
Take a tawa and heat it. Put oil as necessary for shollow frying. In medium heat shallow fry both the sides of the brinjal slice. Serve hot woth rice or chapati.
