Hayagreeva maddi

Hayagreeva maddi - A very famous sweet from udupi. Served as prasadam in any functions. Legend tells that when Lord Vishnu came to Sri vadiraja,in form of a horse, this is what was offered. Now a days many people prepare maddi with sugar, somehow I don't like it at all. Here jaggery is used.
Ingredients
Chana dal/Kadale bele - 2 cups soaked in water.
Jaggery - 1 and half cup
Kobbari - 1/2 cut into small pieces
Ghee - 4 to 5 tbsp
Cardamom - 4
Clove - 2
Cashew nut - 10 to 15
Resins - 10

Method
Soak the chana dal in water for about 4 hours. After that pressure cook the chana dal for 3 to 4 whistles. Once cooked drain the water. You can use it for making rasam. Mash the dal a little. It should not be fully mashed.
Powder the jaggery. Also powder the cardamom and clove.
In a heavy bottomed kadai, roast the cashews (better to dry roast them to get the flavour) kopra and rasins in ghee. Keep them aside.
In the same kadai take the jaggery and saute it. It will melt because of heat and start becoming thicker. Once it is a little thick, add the mashed dal. Mix well and allow it to thicken. Add the powdered cardamom and clove. Also add the cashews and rasins. Mix well. Remove from heat.
Serve hot or cold.
