Capsicum bath

Capsicum bath (donnemenasina kayi bath) - This is an excellent lunch box idea. Very simple and yummy recipe which you can prepare fast especially if you have the vangibath powder. I have given you the recipe for the powder as well.
Ingredients (1 cup = 250ml)
Rice - 1 cup
Capsicum - 3 to 4 medium
Onion - 1 medium finely chopped
Groundnut - 3 tbsp
Oil - 2 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Tamarind - size of 1/2 gooseberry
Vangibath powder - 2 tbsp
Turmeric powder - 1/2 tsp
Asofoetida - a pinch
Salt for taste
Coriander and curry leaves for garnishing.

Method
First cook the rice. The rice should not be overcooked for this. Spread it on a plate and allow it to cool.
Cut the capsicum vertically. Soak the tamarind and remove the paste.
In a kadai take some oil and heat. When it is heated add the groundnuts. When it crackles add the mustard seeds, chana dal and urad dal. When the mustard seeds splutter, add the curry leaves and turmeric powder.
Now add the finely chopped onions. Saute them till translucent.
Add the tamarind paste and the vangibath powder. Also add the capsicum and salt for taste. Let the capsicum cook. It will not take much time. (I like to have a crunch of capsicum,that's why I don't cook it fully). Remove from heat. Now add the rice and mix well. Tasty capsicum bath is ready. Serve with raita and papad.


Vangibath powder
Urad dal - 2 tbsp
Chana dal - 2 tbsp
Red chilli - 3 to 4
Coriander seeds - 4 tbsp
Kopra (dry coconut) - 2 tbsp (you can use fresh coconut also)
Cinnamon - 1 inch
Clove - 4 to 5
Dry roast all the items and powder it using dry blender.
