Palak rice

Palak rice/ palak pulao - Thos is a easy and healthy recipe. A good way to make kids eay greens.
There are 2 methods of making this, i.e., with cooked rice or uncooked rice. Here I have described the method with cooked rice. Here since the palak is only sauteed for few minutes the nutrition is better retained.

The choice of vegetables is entirely up to you. I have added red and yellow capsicum and peas. You can add carrot, sweet corn and potatoes as well.
Ingredients
Palak leaves - 200 gms
Green chillies - 4
Onions - 2 sliced vertically
Peas - 1/2 cup boiled
Red and yellow capsicum - 1 each vertically sliced
Ginger garlic paste - 2 tbsp
Salt - for taste
For the masala
Star anise - 1/2
Clove - 1
Green cardamom - 1
Cinnamon - small piece
Method
Dry roast all the ingredients under For the masala and powder it. Keep it aside.
Wash the palak and separate the leaves from the stem. Grind it in a blender along with green chillies. Keep it aside
Take a large kadai with 2 tbsp of butter. Add 2 tsp of jeera. Allow it to splutter. Add the vertically sliced onion. Saute it till golden brown. Add the ginger garlic paste and saute it till the smell goes. Add the palak chilli grinded mix. Add salt and half tsp of pepper powder. Heat it till the smell goes. Add the boiled vegetables of your choice. (If you are adding). If you are adding capsicum you have to add it after the palak is semi cooked. Add the cooked rice. Mix it well.
It is served with boondi raita.
