Bhature (chole bhature)

Bhature - Bhature is nothing but large fluffed poori made using maida. I always wanted to make this bhature but was not sure if I will be able to roll such a big poori. My mother in law gave me a tip. That is to add chiroti rawa to all purpose flour. Chiroti rawa is a rawa made from wheat available in grocery stores. It is easily available in Karnataka. I get it from there.
Ingredients
All purpose flour - 1 cup
Chiroti rawa - 1 cup
Baking soda - 1 pinch
Curds - 2 tbsp
Salt for taste
Ghee - 1 tsp
Water - as needed for kneading
Oil - for frying
Method
In a large bowl take all purpose flour and chiroti rawa. Add a pinch of baking soda. Add ghee and salt for taste. Add curds and water little by little and knead well. It's very important to knead it for a long time. You can add little milk to make the dough soft. Rest it for 30 min. Roll it as per the size of kadai. It should not be very thick or thin.
Heat the oil, to sufficiently high. Add the rolled bhatura into the hot oil. Press gently with a laddle till the bhatura fluffs up. Fry both sides. Serve hot with chole (channa masala)
