Veg coleslaw salad

Coleslaw is a Dutch salad consisting of raw shredded cabbage primarily. Considering it is hot summer, it is very good to eat salads. I have used eggless mayonnaise for the dressing.
Ingredients
Cabbage - 1/2 of a medium sized. Finely shredded
Capsicum - 1 finely chopped
Carrot - 1 medium sized peeled and grated
Pepper powder - 1 tsp
Eggless mayonnaise - 3 - 4 tbsp
Sugar - a pinch
Cider vinegar - 1/2 tsp
Pepper powder - 1 tsp
Method
Wash the vegetables properly. You can use a combination of purple and white cabbage to make it colourful. The cabbage should be cut lengthwise. The carrot should be peeled and then grated. The capsicum should be finely chopped. Again here also you can use different coloured capsicum.
In a wide mouthed vessel, take eggless mayonnaise and add half a tsp of vinegar. Add a pinch of sugar and a tsp of pepper. Mix well. Add the cut veggies and mix again. If needed you can add mayo. No need to add salt. Coleslaw salad is ready.
You can eat it immediately or chill it and eat. This can be used as filling for burgers or sandwich
