Ajwain paratha

Ajwain parata (Carom seeds parata)
Ajwain, called as Carom seeds in English, oma in kannada has a good fragrance and digestive properties. It has a unique taste also. This parata can be made using all purpose flour (maida) also
Ingredients
Wheat flour - 2 cups
Salt - for taste
Ghee - 2 tsp for kneading dough, then for making parata.
Water - as required
Carom seeds - 3 tbsp
Method
Take wheat and salt as required in a big bowl. Add ghee and some water. Knead it into a smooth dough. Add water if necessary. Allow it to rest.
Make the dough into small balls. Take 1 ball and roll it to the size of chapati. Sprinkle the ajwain on it.
Now fold it into a roll.

Now roll the pleated chapati into a tight circle. Sprinkle some ajwain and flour on it and start rolling.
Take a griddle or dosa tawa. Heat it. Put the parata on heated tawa. Add some ghee on both sides and heat it on both sides till it is cooked.

Serve hot with dal and/ or mango pickle and raita.
